On further review, I've found that this is a problem with most tables in nearly all of the content I have access to. It seems in general, D&D Beyond's mobile view for phones breaks tables into illegible single-letter columns.
And in the cases where the tables don't collapse (fixed width) such as https://www.dndbeyond.com/equipment/scale-mail, they are not using mobile friendly table code. I would suggest using a responsive mobile swipe table layout that allows scrolling of the table without shifting the outer design. i.e. Keep the table fixed width, but allow scrolling
