I'm not the DM for our game but I have all the books and want to content share with the party so we can all use Beyond, but they don't want me to have access to their character sheets, in fear it might spoil things or that it may get edited/deleted by accident.
Is there any way I can create a campaign, content share with the group when they join it, but have a restriction so I cannot open or edit their character sheets? Perhaps when people join, they have an option asking, "Do you want to restrict the creator from viewing/editing your character sheet?"
You can content share with the group without being the DM. You may do this by enabling content sharing in the top left of the campaign screen. You must have a master tier subscription in order to use this feature or another member who has the master sub must enable sharing for you. I hope this helps!

I'm aware of that but it's not what I'm asking. I'm already doing this. I want there to be a restriction that prevents me from being able to look at or edit their characters.

I am not the DM I'm a player. The DM doesn't use DnD Beyond, I'm the only player in our group that buys the virtual books. They all have the physical books and don't want to spend more money buying them a second time. So I want to encourage them all to make an account by content sharing with them, hopefully I can convince them to buy the virtual content too. But as I'm only a player they don't want me to see or have the ability to edit their characters.
I'm just asking if there can be an option added, when a player brings their character in to a campaign, for them to not allow the campaign creator to open or edit their character, merely only see the name and thumbnail, maybe some basic info that would be on a character tent like HP and PP.
The solution is designed around the DM owning and managing the campaign for now. There will be additional options in the future for campaign management, including being able to change who the DM role sits with, but I am pretty certain that the DM role will always be able to view and edit the characters belonging to players in the campaign.

Does content sharing allow people to search for stuff on the website and look through the books? Or is it only added to their character?

Both. But you can only add shared content to characters while they are in the campaign where it's shared.
