I think it is really premature to discuss this... Especially considering RPGs are not videogames, there's no reason why a new edition should come out every so many years (see Warhammer for example, or the third edition of D&D) especially if the current edition is working well.
D&D 5ed is going real strong, and there is SO MUCH still to explore and expand, I really don't see why WotC should be thinking of releasing a 6th ed "a couple of years down the line".
In any case, yes, from a purely economical standpoint I can say with a good degree of certainty that you would need to buy the new books as new, with or without any current discount (which is still premature to discuss, imho)

I personally do not think it is premature to define how over 335 dollars and a promise of "Purchasing the Legendary Bundle also secures a 15% discount off standard pricing for all future digital content product purchases" . Especially since that seems to be a large part of the incentive being the largest paragraph in the purchasing description other then the content list.
When you toss out 300 hundreds and hope something happens, that is called gambling. I am not a big gambler. I would like this to be defined please.
Nobody has even started discussing a new edition yet. Until that point, we will focus on 5e, and making the best product possible. I'd also like to point out that a new edition does not immediately make older editions worthless. I know plenty of people who still play 3.5 and 4.

To try and reply to your question, as far as WE can now, the current deal most probably covers the 5th edition content WotC decides to make a digital content, but we can't know for sure the extent of this beyond that unless we see the current licence Curse has, and I can tell you there is no way we are ever going to see that.

That is, of course, assuming that the sale structure for 6e digital content mimics 5e. There's a lot that can happen between now and then.
I guess you can look at it this way: When the new Digital Bundle would come out for 6e, you can bet that its price point will reflect the same discount that the old bundle offers. That being the case, you would, in fact, continue to get the discount by purchasing the new bundle on all future 6e products.

You and I, live in California one of the strictest consumer protection states in our 50. They can't retroactively change terms of service for a product you purchased before the TOS change date. Just ask Star Citizen how that has worked out for them. In other words, if they promise something based upon a purchase agreement they have to follow through with that promise, granted there is a lot to it but it's pretty black and white biased to the consumer side in Ca.
Anyways, is there a department I could email and find out? The reason I want to know is, because if it does then I would easily buy it, if not then I would probably just elect for a select number of books over it. I am very surprised a company the size of Twitch, Curse and WoTC don't have this defined or restricted.

You also made me suddenly worry that lets say in 5 years 6E comes out, and they stop hosting 5E beyond, which would make your purchases worthless.... This would be pretty terrible. Probably worth pointing out that D&D Beyond is specifically an online site for 5th Edition Dungeons & Dragons. They don't support 3.0/3.5 or 4E, so I wouldn't assume support for 6E will come in the misty future either. Your Legendary Bundle is valid for the discount of any and all future 5E content that WotC releases. To think otherwise is just silly, IMO.
You don't even know if the contact Curse has with WotC will still be in effect when 6E comes out or if it will continue into 6E. Once that is decided Curse/WotC will decide on making a 5E and a 6E bundles separate (which they would just about have to) and/or grandfathering the 5E into the 6E.
But in any instance, yes, they won't "upgrade" the 5E PHB to the 6E PHB. It will have to be re-purchased. I'm 100% confident in stating that. What I don't know (but I suspect) is if they would honor the discount for having the 5E bundle.

According to some interviews of the WotC staff, 5e is not even halfway of its lifespan.
