Is there a way to add a kill counter to a character stats? My players all do this and they are fairly competitive about it (without being too aggressive)
My wizard "collects a sample" from every creature they have killed as a macabre sort of kill counter (a hags tounge, drow eyes, a rival wizards knuckle bones)
True but a nice little "+" button would be nicer. I'll probably try and use inventory mechanics and homebrew create a magical item e.g.a Kill-count Dart and the players can increment that in their inventory with every kill.

How about an actual skull with charges?
Each time you kill an enemy, you get one charge. Every 10 charges, you get sparkles around you for 1d4 turns (doesn't break stealth) :P
EDIT: Also, if you actually do something like this, please do make it public :D
Slow down boys. We need to have some proper rules in place before DNDBeyond can introduce this and Steam Achievements...
Do the Undead count? What about golems?
Myconids and Treants, while undeniably alive are plants - will I get credit for burning down a forest? If I chop down a tree do I get a "kill" - unless you pull it out by the roots and destroy them, it's may not actually be dead. Smashing viable reptile eggs? Eating caviar straight from the still living fish? (What? Bear Grylls has done worse!)
Black puddings that have split due to lightning damage - will they count for extra? Say I "kill" 4 hydra heads, and my mate "kills" another 5, finally finishing it off with a heart-thrust, how do we divide the credit?
A druid shape changes into a dire wolf and you kill the wolf, but the druid transforms back and escapes...? What about familiars?
Say my blood drenched, gore splattered barbarian wanders into a wedding ceremony, killing the mood stone dead, does he get one kill for "the mood" or 1 for each guest who's individual mood has been "killed"? On a related note, how many kills did Bill receive at the chronological beginning of Tarantino's masterpiece?
What if I kill a myrdraal, do I get credits for the trollocs that were linked to it? What if I am immediately hit by balefire after that, and my presence in the thread is burned out past the beginning of the encounter?

My Shadow Sorcerer does this in OotA campaign I'm in. Uses them as extra spell components for additional effects.

Not one that's visible to other players but it's easily something you could track in Notes
This is on the list. Pretty far down, but it's there.

You can just put it in "Other" under the Notes section for now, just to keep track.

Like Eric Cartman, I'm "just asking questions."

I think these answers apply to one or more of your question, Plundered:
maybe, yes, definitely, not really, could be, mostly no but sometimes yes
