Thinking of buying into this for an online game but have a few questions based on if I buy into the Master Tier:
Can I control the content that is available to my players? ie) I buy players handbook, want players to have access to all that. I buy Dragon Heist, don't want my players to have access to that. Later on, something in Dragon Heist I share with players, now I want players to have access ONLY to that bit. Is this possible?
Maps, can they be shared to players? Do they have token ability? Can I use this feature as a battlemap for online play? Does it have Field of View or Fog of War?
If i buy books by themselves, will it drop the price of the Legendary Package based on the books I've bought? I saw a review saying buying single items from a book would do this, but does it work with books and the Legendary package as well?
1. Sharing is currently an 'All or Nothing' approach. It is either turned on completely, or turned off completely. The plan is in the works to introduce more fine control over what exactly you decide to share - it's just not available yet.
2. Maps displayed are as they are exactly from the books. There is no virtual fog/battlemap functionality to them.
3. Yes, individual books will lower the cost of the Legendary Bundle. Any amount you spend will be directly applied if/when you purchase Legendary - Books, piecemeal, etc.
All or Nothing? is that All of Book B and D or All of Books Owned? Can I make it so that I am sharing only things like PHB, Xanathar's Guide to Everything, but not sharing Dragon Heist?
Is it possible to create custom monsters, items and such? Mainly, say if I want to add a monster from another source book, could I do this or is it against the rules? What about an item? Content made completely by myself?
1 . It is all content owned. In a campaign with content sharing turned on, all content owned by any of the players/GM is available to everyone in the campaign.
2. You can certainly create any homebrew you'd like. You can add anything you want as private homebrew (which is the default). Anything you wish to make public must be original. The Developers have specifically stated that adding non-purchased content as homebrew is allowed.
Okay, hopefully they will allow such limited sharing soon, as that makes me not want to buy such Campaign content right now.
Cool, that'll help a bit. Hopefully creating that homebrew stuff is not too difficult.
Another question, I am thinking of adding a homebrew rule of all lvl 1 PC's start with +5 HP. Was thinkign of doing a level 0 thing start thing, but think the +5 HP will help stop one shot kills at lvl 1 as well. Is it possible to do this?
If my players create their own characters, I assume they will be able to join my campaign that I set up. Can the DM edit character sheets? ie) Add the above mentioned +5 hp to hit points? Or when I give them a magic item, can I add it to their sheet?
If I purchase the Races package of Volo's Guide to Monsters, would I also need to purchase the Sub Races package as well ro would the Races package include everything in the sub races package?
If a character makes their character private at creation and joins a campaign, can the DM still see it?
1) As long as everything you want is part of VGtM, you would not need to purchase anything else. If the races you want are not, you can buy individual races without having to buy the book.
2) If the character is marked private, no one can see it but the player. The site says, "Toggle the viewing of your character to 'Private' (only you can access your character), or 'Public' (anyone with the link can view your character)"
2) Well, I tested it out by creating a new account and joining the campaign. I made a character with that account and made it private. Switched over to my main account, the DM one and I could view and edit the "Private" character. So perhaps Private is only Private from other players viewing your character?
1) I tend not to worry about players looking at the Campaign Book. There are plenty of streams / podcasts for them to watch if they really want to look ahead. Realistically, they are only ruining their own fun.
2) It's very easy to load the maps into roll20/FG and add Dynamic Lighting.
There is also a really great script I use to import characters from D&D Beyond -> Roll20/Fantasy Grounds. This really helps players who are new to the game and need the help of D&D beyond to create their characters.

The use of the private/public toggle is for whether the character is PUBLICLY visible and has no effect inside a campaign.
In a campaign, all characters are visible to other members of the campaign (you can click the VIEW link on them).
D&D Beyond includes the ability to link your character so that others can see it, outside of campaigns - this is what the toggle manages.
As an example, here's a character I played in a game a few months back:
