I'm a veteran of 3rd Edition, 3.5, and 4th Edition just recently getting into 5th Edition and I've made an observation - unless I'm missing something, in 4 years since the creation of 5th Edition it looks like only one class has been added to the roster of classes here since the Player's Handbook came out and it's not listed as "official".
Has the staff actually gone out and said they were against making new classes for 5e, instead making new paths for their current classes?

Yes, you're correct - Wizards of the Coast designers have said that they do not intend to add further core classes and are instead adding subclasses to the game.
They have added new classes as playtest material over the years, through Unearthed Arcana. While there is no currently live playtest class, there is a chance that one of them, the Artificer, will be eventually added to the Wayfarer's Guide to Eberron.
Thanks for the quick response! I don't suppose they've decided how they're going to deal with things like Psionics then? I can somewhat see them being spread into different classes, but I can also see them getting one class with different Disciplines. If Artificer might be getting a class of their own, perhaps that is a possibility, then...
Purely asking for Home brewing reasons, there are a couple of brews I'd like to try to bring into 5E.
They tried a variant of the old Psionics class as "the Mystic" through a run in Unearthed Arcana. While it proved "popular" it was proved very broken and so it never made it to "official" status. They may be reviewing it for future but no set plans on it as of yet.
The restraint that 5e's development is impressive. Less it more for this Edition, IMO. I grew up on 2nd edition and bought a ton of random books. I think the current business cements 5e for much longer than other editions (other than D&D Basic).
From experience with 5e, the core classes are well designed frameworks that all play differently to each other, with some interesting differences in mechanics between them - even Wizards and Sorcerers play quite differently as a spell caster.
Each subclass adds flavour and again, can change how that core class feels to play.
I've played a Rogue as the Scout subclass, mostly focusing on range combat with a longbow. I've also played a Rogue as a Swashbuckler subclass, which was always in the thick of melee and played very differently as a character.
I love the flexibility that different subclasses add. :)

If you are really keen on the way they are looking at Psionics, Mike Mearls Happy Fun Hour videos on youtube has a section where he goes through and designs a bunch of subclasses and eventually a psionic class. They start from about the last quarter of episode 13 (i think).
@Lowswaith: The only reason I brought up Psionics was because it regularly introduced new mechanics along with it's powersource, so I was hoping to use it as a stepping stone as you will to revamp and update Incarnum. I loved the idea in 3rd Edition, but felt it's execution fell flat. When Player's Handbook 3 came out for 4E, I worked on trying to homebrew something to update the powersource once I got a look at how they did Psionics and how it changed things up from the normal progressions. Got up to 10th level before my friends decided they didn't like 4th Edition that much anymore and moved on to Pathfinder. ^^;

I find this fascinating. Back in...'06-'09, I think, I played a Mystic as offered in the D&D Rules Cylcopedia - and it totally rocked as a PC! Nothing about it that I would call 'broken', so I've no idea what is meant by that.
I would love to play such a character again - I still have the old character sheet for it, she'd only gotten to 9th level, but was already amazing. (To be honest, I'm pondering the notion of homebrewing it, if I can, since 5ed doesn't recognize it.)

The Artificer class is actually coming and is near the final stages from what I've heard.
