I've been playing online games for awhile so i know the rules pretty well, but I'm just now looking at trying organized play in-person.
I know dms usually have premades on hand, but i wanted to make my own to bring to it. How do i make sure it's all legal and proper? For instance, recording buying extra equipment with my starting money before i go , selling stuff, joining a faction, etc? Should i just bring a character sheet that only has unmodified starting gear?
The character I'm planning on using, for reference:
1) Make sure you record your starting equipment in a logsheet. You can sell starting equpment and use that gold + your background gold to buy other gear.
2) Make sure you're only using one non-PHB source, except for backgrounds. You can also use the custom background feature found in the PHB.
3) Make sure your ability scores are 27 point buy or standard array.
4) Make sure all the games you play are in accordance with the AL rules. This means each character needs to be AL legal. The DM should have a DCI number. You can go to dmsguild.com to download the player's pack for additional rules questions. It's free to download.
Joining a faction is up to you. It's not required.

I used point buy, my subclass and some spells are all from xan's so should be good there. The game is hosted at a hobby shop that does them weekly so I'm sure they're up to par there.
I have to record starting gear in the sheet, or is that just for when my stuff changes like after sessions and buying things?

It's a good idea to record starting gear. Not everybody does it. I don't think it's necessarily required.
