Would leveling up while unconscious stop death saving throws and give the player more health? I had two of my characters die from death saving throws two turns after they would have leveled (Another player killed the last enemy). Would leveling have done anything to stop them from dying?
Generally speaking, "leveling up" usually happens during some kind of downtime or between sessions. It's an abstraction of character growth, and not necessarily intended to happen the instant your XP reaches a certain point. I don't think there's anything to explicitly stop a DM from interpreting things how you have suggested, but it's definitely outside the usual RAI to level up mid-battle or have an increase in max HP change your dying status.
Personally I only allow characters to truly level up during Long Rests. It just seems odd to me that suddenly after a combat a character gains a significant growth in power (for example extra spells or even an entirely new feature from an archetype. But that said, there's nothing game breaking about it. Heck, it could even be part of the story where the heroes step on death's doorstep only to emerge stronger from it. It happens a lot in movies and stories so why not :P

No where in the leveling up information does it say that you gain hit points when you level up. You gain a hit die, and your maximum HP increases by X amount. By that, even if you did level while on the verge of death, it would not save you.
