Not in the rules as they're written, but there are a few spells that you can adapt with a little bit of creativity and a friendly DM. There are spells to hold a summoned demon or devil in and there are summoning spells, so I imagine that you could start with those, bump them up a level or two for longer durations, and go from there.
I don't know about what spells to use, but depending on the CR, it should be a really high level spell. I might also have to have concentration, as the demon/devil/angel would be actively trying to escape.
Also, was the DnD story the one Puffin Forest made?
Now I know it's not as powerful, but we fought a Mimic (that took out 1/2 our group) and when it was wounded enough to try and escape, I approached it and offered to heal & protect it if it became a weapon for me. Got a Nat 20 on my persuasion and now have a 2d8 sword that change eat people :)
There are a few mechanical issues with a mimic sword, but it's pretty awesome thematically if your DM goes with it.
First if course is that standard Mimics don't speak any languages so a persuasion check would be useless (though there is an optional rule making them smarter). Also they are size medium so the sword would be as big as you. (It doesn't actually specify if it can change size or not in 5e, but it had to stay roughly the same mass in previous editions). It only does the acid damage with a bite, so as a sword it would only do the 1d8 pseudopod damage. When in object form it adheres to anything that touches it, so you would be constantly grappled by your sword. Your sword would also be grappling anything you hit, so after one hit you would need to draw a second weapon in your other hand to continue attacking.
Soul Cage does something very similar for humanoids, though that doesn't help much with Outsiders admittedly... I'd check whether your DM is amenable to you capturing non-humanoid intelligent souls using that spell, or a similar homebrewed one.
True polymorph maybe? I'm pretty sure if it failed the throw, and you concentrated the whole time, you could turn a demon *into* a rock. Kinda the same thing right?

I know what you're thinking: "In that flurry of blows, did he use all his ki points, or save one?" Well, are ya feeling lucky, punk?
So.... I saw a DnD story where an evil necromancer trapped a demon in a rock. So I wondered, was there any way to do this as a PC?
Like, if I wanted to take a Demon or angel, put it in a jar, and carry it for an adventure, could I? Without using wish, of course.

Haven’t used this account in forever. Still a big fan of crawling claws.

That’s the beauty of DnD my friend. If your DM rules it, and you can find an in game way of doing it, anything is possible.
S’all in the dice.
The only spells that I know of that can imprison someone against their will for an extended duration are Wish, Imprisonment, Magic Jar, and Planar Binding. What you described sounds most similar to using an Iron Flask, but you can also hold people with Dimensional Shackles, Iron Bands of Bilarro, and Mirror of Life Trapping

Maybe. Maybe not. Who’s puffin forest?

I'm going to make this way harder than it needs to be.

Yeah, but I want it alive, kind of as a pet, but unwillingly. The soul cage is fun though. You can do it with Magic Jar, as I have learned.

Wow! Tha5 mirror of life trapping? It’s only very rare! You could use that on a tarrasque and it could be trapped, with luck! Ok. That is awesome!
Iron flask w/ General of Gehenna. Now you have all Hugo Lott’s in the Multiverse under your control.
