so I had the thought for my next character; an Elven monk trained to fight demons and aberrations using martial arts and inner spiritual skill. Problem is I don't know how to really translate it into the given mechanics
So far I'm thinking kinsei (because when I see monk now I think kinsei before everything else) using a long sword and darts, but I wanna consider other options. Anyone have any character building tips?
I have, but it just feels too limited for attacks and not nearly as fun as just playing a cleric, which I kinda want to avoid in terms of a unique character

You could leave this all to background story, character development, and flavor of your character. You could multiclass Ranger for favored enemy stuff. You can multiclass Cleric and use holy power to fight these creatures.

In a mechanical sense, I'd say to get more of a demon hunter vibe a multiclass would be a good choice.
Fortunately, a ranger would multiclass really well with a monk given that they have similar primary ability scores (DEX, and WIS).
For instance, Let's say you're a 3rd level monk / 3rd level ranger. My recommendation would be to pair the Kensei monk with the Monster Slayer ranger.
As Domcarlina mentioned, the fluff and backstory of all this is going to be up to you. But mechanically, those could be some good options. Maybe start as a demon hunting ranger and multiclass into a monk as part of your monastic transition?
oh, I never even considered a ranger as a multiclass option before, so that's a great idea! gives me fluff, a fighting style and a way to show i'm hunting demons by giving me a chance to find and hunt them, so yea that's pretty perfect!
Now for a build of that, how should it go? Ranger spells can eat up a bonus action as much as the monk's attacks do, so I either have to limit them or choose how to implement them better. I'm thinking 3 levels in ranger and 5 in monk? what would be the recommended thought of this?

Ultimately gonna have to agree with Dom. Demon hunting can sort of be just a thing your character does, without the class features having to be specifically about that. You can make near any monk fit the bill. Perhaps an edgy shadow monk who stalks them in the dead of night or in the Underdark. Maybe a long death monk who wants to inflict upon them the slow suffering they themself have felt at demonic hands. A sun soul monk on a divine journey? A drunken fist monk looking for a challenge.
It's rewarding in its own way to have your character's mechanical features fit the theme or goals of your character, but they definitely don't have to align perfectly for satisfying character creation.
all good points, so thnk you for the advice! I looked into ranger a bit more and saw probably my favorite multi-class with the monk now. I have an idea for a build too, mainly going off the counters it provides. scratch that, the counters only works if the target is large or larger, so yea that wouldn't work if I tried it. kinda dissapointed, as it would have allowed me to do those cool martial arts counters like in the movies and such. ah well.
So yea the idea is to have dueling for that +2 damage to one handed attacks, take a whip or a longsword and just go to town on the the enemy, and probably going monk 5 ranger 3 for all the good bits. Either take horde breaker for an extra attack or colossus slayer for more damage, and with hunters mark even the punches will be more effective with 2d6, so it all sort of falls into place!
