I'd go paladin 19/fighter 1 for a second 5th-level spell slot, a second feat, Second Wind, and another Fighting Style. Defense (+1 AC) for the fighting style and the feats Tough and Blade Mastery.

I know it's not mandatory for a Paladin to wear plate armour, but the lack of AC could become difficult and plate armour needs a minimum of 15 strength.

What lack? Studded leather with 20 Dex gives base AC 17, shield adds 2, and Defense adds another 1. That's AC 20 without magic items.

:D thank you for looking at my fun query! You could also just roll with Half Plate which gives you 15, and the dex of 20 would get you to 17. So just 1 point lower than Full Plate's 18. :D

Half plate gives disadvantage on Stealth checks, studded leather doesn't. Also, studded leather is lighter and cheaper.

but most GMs might wave this since you have a high dex and are a "dex fighter"
Bracers of Ogre Strength will take your gauntlet slot and need to be attuned, but they are one of the cheapest magic items. They will bump your strength to 19 (since you're hitting Epic levels the more powerful version are possible).
This will allow you to wear plate if you want too.
IF you don't want to wear plate can I recommend this:
1st level in Rogue, 18 levels of Paladin.
This gives you 4 starting skills instead of 2! In addition since you're going for a high dex, a rapier, you can start dealing an additional 2d6 sneak attack damage! Also, you get Expertise in 2 skills.
If you wear the Braces of Ogre Strength, your 8 Str becomes 19, and 1 of your feats is Shield Mastery.
Now every turn your Bonus Action can be spend to make an Athletics Check to knock your opponent over (your check is +16=+4 (str) +6 (proficiency) +6 (expertise)) So you are going to win that, now your enemy is on the ground and you have Advantage on all of your attacks, and one of them gets Sneak Attack. Plus being prone, they give Adv to all of your allies.
In addition you have a high dex, get your shield bonus against single target dex spells, and have evasion once a turn if your reaction isn't used up. With a +6 Proficiency +5 Dex +2 Shield, at a +13 you should be making that save pretty often. (Remember your level 1 is Rogue). This will keep Wizards/Dragons/etc from messing you up.
With this you could take nature skill as theme the rogue as a "Scout" who became a Paladin and took Oath of the Ancients. (possibly also take a level of Fae-Lock dedicating yourself to a avatar of the those ancients) [my personal favorite]
With this you could take more city city/social skills with the criminal background and try to be a reforming criminal with Oath of Vengeance. You saw the path that shouldn't be taken. A Punisher type character. [I have a character like this now]
As for the 2nd feat there are a lot of options:
Lucky is always a good one
Medium Armor Master means you don't take DisAdv on Stealth checks in medium armor and you can add +3 Dex to AC instead of +2, so Half-Plate a an AC of 18.
Mounted Combat means you can improve your speed even more and be a Hafling Outrider paladin (especially thematic with the Oath of the Ancients and a fae mount)
Defensive Duelist: you can use your ReAction to add at +6 to your AC against an attack (this takes up your reaction leaving you vulnerable to AoE spells)
WarCaster: mean you have full access to your spells while holding a weapon and shield plus Adv on Concentration checks, plus can use a spell for AoO (uses up reaction, leaving you vulnerable to AoE spells)
Lucky is not a good feat for a halfling. The halflings' version of lucky, copied directly from here:

I would argue that Halfling Luck doesn't negate the usefulness of Lucky for a few reasons.
1) Lucky could be how you describe yourself as "Chosen"
2) Halfling Luck kicks in *everytime* you roll a 1, which is awesome.
3) Lucky can be used any time you roll a 2-9, which is awesome.

You can also never be critted when you have 100% fortification magical adamantine armor.
