I'm planning on adding Magic Initiate (Wizard) to my Thief Rogue (Not planning on Multiclassing), but I got no clue what spells to pick. Currently, I'm thinking of Mage Hand, Minor Illusion, or a reflavored Booming Blade (either cold, psychic, or necrotic damage, still figuring that out), and maybe Find Familiar for the 1st level spell. But I can't figure out what's best, and if any other options are better or whatnot. Does anyone have any advice?
Those are the options I'd pick as well. If you're a melee rogue, Booming Blade is a fantastic option. Make sure your DM is okay with changing the damage type on Booming Blade. Both Mage Hand and Minor Illusion are good as well for any rogue. Find Familiar is probably the best option for 1st level spell.

Any of the utility cantrips are exceptionally well used on Rogue's. Mage Hand, Minor Illusion, Shape Water, and Mending are my personal favorites. Friends is nice to have in your pocket as well, but it's kind of niche and I've been in few campaigns where it's had the ability to shine.
As far as damage cantrips go, Booming Blade is great with Rogue abilities, Toll the Dead offers a decent sized damage die at ranged, and Shocking Grasp works surprisingly well with Rogue also.
For the First level spell I would recommend considering Charm Person, Find Familiar, Silent Image, and Disguise Self heavily, as they all have tremendous value. Find Familiar is probably the best of those four because it isn't as dependent on setting. You just get a neat little friend and can re-summon them whenever, lol.
Friends is nice to have in your pocket as well, but it's kind of niche and I've been in few campaigns where it's had the ability to shine.
A quick note on Friends is that it's not properly named... It WILL turn someone hostile against you, as the person notice you used magic against him... Not quite relevant in an interrogation scenario (since you don't care much for the hostility), but for actual use in a social environment, that can really bite you in the back.
I would also add Prestidigitation to the list of interesting cantrip for its wide range of utilities. Gust could also have some utility, depending on the DM/flavour you want.
Mage Hand is pretty limited, unless you're an Arcane Trickster. Booming Blade is like a second attack, Minor Illusion is great for creating cover. Put a boulder around yourself and then attack from cover. Prestidigitation is a really useful utility spell.
In my experience, the two best 1st-level spell results for a Rogue are Find Familiar and Silvery Barbs. if you've got any Wizard friends, they might be able to scribe a Find Familiar scroll as needed (or load a Ring of Spell Storing), while you could use Silvery Barbs every day. Guaranteed Advantage 1/day.
In the Player's Handbook 5e, it says that Magic Initiate is for only: Bards, Clerics, Druids, Sorcerers, Warlocks, and Wizards--- so how is it possible for a Rogue to use Magic Initiate? Isn't that against the rules? ... unless the Rogue multiclasses with Wizard???

You have misread it. If there are restrictions/prior requirements to a feat it will be listed under Prerequisite. For example to take the Heavily Armored feat thePrerequisite is proficiency with medium armor.
There are no Prerequisites that restricts a class from taking Magic Initiate therefore any class may take the feat.
