I'm currently level 5 but I'm planning on multiclassing at level 12. I'm considering bloodhunter for aesthic and general fun of it but I'm not sure if it's the right choice for the character or if I should choose something safer like the fighter class. Any advice or opinions would be welcome.
I'm currently playing a SK, and I will say a single level of fighter does wonders for the class.
I looked into artificer (armorer) as well as bladesinging wizard, but neither class felt right for what I was going for. They both have cool options that could work for you, though.
I considered wizard but decided that by lvl 11 it'd be a weak dip. Bloodhunter gives curses in the first level and a constitution bump by lvl 5 I'll be able to attack 3 times per round, 4 if you count the bonus action ill also get 2 weapon fighting, plus 2 cantrips and a warlock spell. It also just feels like a cool character arc... however, I'm still tempted to go with fighter and I'm not sure why!
To be honest, Soulknife is a subclass with abilities that increase as you level up since your Psionic die will go higher and higher, up to a d12 at level 17. Plus you get more Psionic dice as you level up, up to 12 Psionic dice at level 17. You need to consider carefully how much you use your Psionic powers (and how useful you find them). Since you are level 5, by 12 you will have a better understanding of how it works for you. I play a Soulknife and I use my Psionic dice all the time and can't get enough of them, but this will obviously depend on your playstyle and party composition.
As for multiclassing, Fighter is a solid option for most classes, and Rogue is no exception. Psi Warrior or Battlemaster are both good options but another choice you could consider is... Champion, allowing critical hits on 19-20 will do wonders with Sneak Attack, especially if your DM allows Steady Aim (it's an optional feature). Every turn you can use a Bonus action to give advantage to yourself. Even more potent if you are an Elf with Elven Accuracy. Rolling 3 D20s each attack with a critical on 19-20 gives very good chances at a critical hit. Boring, but can be effective.
Warlock is another solid choice, I was more thinking of Hexblade (Critical Hit increase), but Genie Warlock sounds great too (Proficiency to a single attack roll), plus spells and some much needed cantrip utility.
For another option you can consider a Bard (Swords/Valor), as it fits very well with the Rogue thematically. Swords and Valor subclasses can provide extra combat power while Bard itself will give you one more skill, expertise to two more skills and jack of all trades, making you the ultimate skill monkey. And that extra skill you pick from Bard will benefit from Psi-Bolstered Knack AND Reliable Talent.
Finally, another option worth considering is a Twilight Cleric. You will get some spells that can work very well with a Rogue (Faerie Fire, Sleep), but the 2 other abilities Twilight Clerics get at level 1 are amazing for a Rogue (or anyone really). Having permanent advantage on initiative (you can put it on yourself after every combat) means you can ambush enemies more easily, while having 300 feet darkvision allows you to Sneak Attack enemies without Steady Aim and without hiding, if you can strike them from beyond their Darkvision range. Most creatures have darkvision of 60 feet, so at 65 feet you will be invisible to them, no rolls required. Plus playing with shadows can fit a Rogue thematically.

Both psi warrior And battle master are cool options, psi for flavor and BM for raw combat.
Bloodhunter does sound cool as hell though.
