I wanna share my idea with you. Let's start with stats: Str - primary so you wanna get is max as fast as possible Dex - you can keep it at 16 for long time Con - secondary choice for some more hp Int/Wis/Cha - feel free to pick them as u want but if you get some nice rolls you can pick between skills (Int), perception (Wis) or beeing face (Cha).
Skill choice main choice is atletics with expertise from rogue - we would back to that.
Next is to pick 3 levels of barbarian with bear totem feature - it provide you nice starting hp, 3 rages at long rest, danger sense and rage resist to all except of psychic damage.
Then all you need is go rest levels into pure roge i would pick Thief for some flavour and nice features like climbing speed, or using all magical items without problem.
Then main point of this build is use half plate with medium armor master - that gives you with 16 dex same AC like full plate without stealth disadvantage (max dex could be nice then). Secondary use shield with shield master to shove as bonus action.
This build gives you quite nice damage and survivability with control on battlefield. Rage gives advantage on atletics so with max str and expertise this is hardly resistible. Same rage make you resistant to almost all damage so with uncanny dodge and evasion you can make your enemy hit you like a little kitty ;) Little bonus +2 to damage with fineese weapon using str is still nice. Danger sense giving advantage on dex save vs efect you see with shield bonus to dex save from shield master feat, resistance from rage and evasion is quite op. Then after atacking enemy with your fighter or other meele PC you get nice sneak atack and then you can shove with bonus action making you bully and giving harsh advantage on poor prone enemy.
If you have open minded DM you can talk about making shove action as bonus action first and then you must make atack with sneak and advantage. But it's open choice for DM, still even if you give that prone enemy to other it's still nice battle control.
I'm doing almost the same exact thing but plan on gettimg Level 5 barb before switching over to Rogue.
The second melee attack is another chance to get sneak attack. Wondering if 3 Levels of Champion is worth it too for the Action Surge, two-weapon fighting, and extra crit range. With Reckless, Rage, and Action Surge I figure I can go "nova" once per short rest - with basically 12 rolls to get a crit.
Yeah i thought firstly about making 3 lvl of fighter champion for better crit range but then barbarian make it not worth. I recommend 3 lvl dip cause u not miss any Thief traits like making two turns on first round in fight. And making it 5 barb and 3 fighter u loose many dice's from rogue and his two subclass traits.
I'm doing this currently. Character is at 5 Barb/4 Rogue right now. I was specifically going for a grappler build so extra attack was important for me. I use a shield often so I had to go thief for bonus action shield doffing. Thief also works out well for the climbing. My athletics bonus is currently sitting at +13.
One thing to consider is that if you're going to max out Con anyways, medium armor master is probably not worth it. Max Con and 16 Dex gives 18 AC.
I ultimately decided that it's hard to do this combo wrong. Most level splits will work because the two classes complement each other so well. I think my ultimate level split will end up 12 Rogue/8 Barb to get all the ASIs I can while still getting extra attack and a respectable sneak attack.

You will be a great grappler too.
