I've been working on a warlock for a bit and while I have his whole backstory etc. figured out, can't settle on a patron.
So my guy starts life as a down-in-his-luck tiefling, makes a pact with his patron, becoming a very powerful merc/war lord who very much likes being an angry power-hungry killing machine.
Til one day he bites off more than he can chew and gets killed. He begs his patron for a second chance.
Patron casts reincarnate on him (basically) but with stipulations. He wakes up days later next to his dead body with 0 memories and a curse on his speech that makes it difficult to communicate with others (still work shopping details there, basically it's part of his punishment for screwing up) as a very dainty moon elf with cherubic hair and sparkles.
he'll probably gradually regain his memories and struggle with the whole 'wow i sucked. but i don't wanna suck ;c '
This is where things get iffy, I know he's no celestial warlock bc duh so:
1. Fiend makes sense bc fiend wouldn't want to give up a useful pawn + the obviously violent power hungry tiefling, however it seems a little boring to me
2. Hexblade makes sense bc I visualize him as a melee fighter, he'd take the cool sword off his dead body. But the details of the actual patron there are a giant ???
3. Archfey I love the aesthetic of and with this one I picture more of a disappointed in him sort of thing. Like when first made pact he was less of a power hungry jerk and the curse / memory loss is expressly to prevent him from using his charismatic words and nature to be an evil dude again. However the spells/etc. really don't match the 'evil warlord of murder' (no offense plant growth and calm emotions)
as for undying and old great one, I'm don't care for great old one, and im not familiar enough with the undying to have an informed thought on it
You seem to be leaning towards Archfey so go with it. If you don’t like the spells, then don’t use those ones (pleanty of great warlock spells available) or if you want something special, change the spells. Mike Merels on twitter said swapping a spell for a another of the same level is power neutral. You don’t want plant growth, then take lightning bolt. Work with your DM to personalize your character. That’s what they are there for.

The Archfey have access to lots of really nasty spells; not just the ones on their expanded list.
Actually, Plant Growth is a killer spell. Our group in Tal' Dorei shut down an entire camp of Ravagers with that one. Picked them off with ranged attacks while they could hardly move. Plant Growth and Eldritch Blast took out several of them.
My next killer combo is Plant Growth and Sickening Radiance. The victims won't be able to escape at 1/4 movement, and they take an exhaustion level every round. The 2nd level of exhaustion halves their movement again! Don't underestimate Plant Growth.
If you are the same type of warlock as before your death then yup fiend or hex, make for good warlord material. A question is whether it truly is his former patron that gave him the second chance - has his second life been granted by some other other power source pulling a bait and switch? If your going to have the character retrace their former rise to power work out how they became a warlord - they needed capable underlings, so how did they gather them - speechcraft, slavery, magical coercion? then begin working out what proficiencies and spells / abilities would be best suited to make the character you have into the character you envisage. (And have some fun doing it :)
I agree with archfey. Fiends love to make deals but they don't usually screw with you for their own amusement so much as they do what you want and then say "this is what I want in return and here's how long you have to fulfill your end". Fey are often malicious tricksters who would get a kick out of reincarnating you as something ridiculous.
