I know vampires and wraiths can reduce it on hit, as well as the harm spell, but I feel like there has to be more. In what other ways can you have your max hp reduced?

You only lose if you die. Any time else, there's opportunity for a come back.
There are several monsters, mainly undead and fiends, that can reduce max HP. Succubus/Inccubus and the chasme come to mind. If you search "hit point maximum is reduced" on Dnd Beyond, a bunch of monsters with that effect will pop up.
The rules get a bit iffy, though, when it comes to effects that change your Constitution score and increase your maximum hit points only to let them drop back down when they expire. I don't think such things should count as hit point reduction, unless you're ok with the necromancer keeping the benefits of amulet of health forever and the hit points of an ancient white dragon that they shapechanged into.

Mummies can reduce max HP as well, and 4 levels of exhaustion will halve your max HP.
