There's a problem with that. Abilities do exactly what they say they do. No more, no less. Devil's Sight on actual devils is written as "Magic darkness doesn't impede the [devil]'s darkvision." It's specifically and intentionally not written in the same way as the Invocation.
The rule of K.I.S.S. works for me. Keep It Simple, Stupid. Just keep everything as bright light for Devil's Sight. Dim Light is also partial darkness. Wasting a lot of time in and out of combat, studying light sources does nothing to further the fun of the adventure.
So I see the issue with the Eldritch evocation, but the Ice Devil's description of Devil's sight reads like so
Devil's Sight. Magical darkness doesn't impede the devil's darkvision.
In this case do you all treat it as written? which means they have dark vision and magical darkness is just regular darkness to them with darkvision? and how do you deal with Umbral Sight?

At 3rd level, you gain darkvision out to a range of 60 feet. If you already have darkvision from your race, its range increases by 30 feet.
You are also adept at evading creatures that rely on darkvision. While in darkness, you are invisible to any creature that relies on darkvision to see you in that darkness.
I read it as I am invisible to the ice devil while in complete darkness.
You're reading it correctly. The Ice Devil's addons to darkvision don't interact with Umbral Sight, so the normal ruling would apply. It similar to how Blindsight doesn't interact with the Invisible condition, so even though you can see the person, you still have disadvantage to hit.

Look at jeremy crawfords explanation its kind of like the darker it gets the better you see as you tap into some dark energy in complete darkness
