Additionally, no variant character creation rules can be selected at all.
Just tested with new Barbarian, new Acolyte, old Human (non-variant). Only got the background ASI and had access to the Origin Languages option from Tasha's. Might want to go through your creation process to see what broke, because it's not just from creating a character step by step in order.
Not happening with PHB Half-Orc (2014). Other options are the same. That race is a homebrew option, so I looked with a homebrew option and that's the problem. Homebrew is handled separately and you, as the player putting it in, are responsible for following the rules during creation with them.
The optional features finally show up in the homebrew, but to do the part with no ASI from species, I had to replace the empty option with a modifier of +0 Con (!!!)
