I'm not seeing any Tal'dorei subclass options in the character creator right now, or any of the EGtW, even when I have the slider checked to enable that content. The Blood Hunter class is available to select for me, though.
I've tried unchecking and rechecking the box for it, nothing changes. What's going on?

You need to select the Legacy (2014) version of the class you want in order to see subclasses that haven't been updated in the 2024 PHB.
D&D Beyond treats the 2014 and 2024 versions of each class as two separate classes, and older subclasses (including all the ones from partnered content like Critical Role) are only attached to the 2014 versions of the classes.
When I submitted that purchased 3rd party subclasses weren't appearing from any sources I was told known issue being worked on has that changed?
I can't speak to that, but I can tell you that just now I was able to make a character using the Echo Knight subclass from EGtW just fine, as long as I select the 2014 (Legacy) version of the Fighter class and not the 2024 (Core) one. I don't own the Tal'Dorei book so I can't verify that those work too, but give it a try.
They don't work with th2024 yet wich is the thing I was last told was still being worked on
As far as we know, it's being worked on, but "worked on" almost certainly includes negotiations with lawyers involved. If that concludes successfully, then they still have to do the technical side of things.
So it's probably going to be a while.
(In the meantime, you can use private homebrew to port them over to 2024 classes.)
The Feats from any Critical Role book don't work, regardless if it's from 2014 or 2024. I have a 20th level Chronurgy Wizard that was built almost two years ago, and I am unable to find anything from Critical Role manuals. When I build a new character and select the 2014 version of the Fighter, The only feat I can find is Firearm Specialist.
