I cannot seem to add spell slots to my subclass? I'm not sure if I'm doing something wrong but when I create a character to test it, it only lets me select one cantrip spell. Help?

Assuming you are trying to add a spellcasting subclass to a nonspellcasting main class (like eldritch knight or arcane trickster):
Make sure that you have given the subclass the "spellcasting" feature. This lets the site know to give it spell slots. And make sure you assign a spell list to it or individual spells for it to choose from.

No, currently you can't modify the number of spell slots of a subclass.
But Cantrips do not work with spell slot. You can certainly add Bonus Cantrip as some official subclasses do.

It will certainly let me add many cantrips but I can't add any spells.

I've done that, and it will not let me add any spell above a cantrip or any custom spell I've made.

You need to add a subclass feature called "Spellcasting"
Start a new homebrew as a copy of Eldritch Knight, or
Arcane ArcherArcane Trickster to see how this works.edit: thanks for the correction DxJxC!

Arcane archer doesnt have spellcasting, you mean arcane trickster.
(Also all stuff that I mentioned in my post which you said you did, Skittsue.)
You're right, I did mean Arcane Trickster. Thanks for the catch there! :)
I just had a look at the subclass from the link provided and it doesn't have a Spellcasting class feature yet.
This is a bit of an obscure mechanism for adding spells to a subclass though. :(
