Is the only way I am able to access the information contained inside of those by viewing it from the character sheet or edits of it? Attempting to access the details of the race brings me to a page that doesn't exist.
The easy answer is don't use UA content then. Unearthed Arcana is explicitly marked as playtest and is subject to change / removal. If you only use "official" content (ie rules that have been published in hardcover books) you will be fine.
With WGtE as an edge case, WotC and Beyond acknowledge that some people didn't realize when they bought it that it was UA content, which is why Beyond is offering refunds.

It feels like a lot of the answers I am seeing is that you should be checking if updates have occurred to make yourself familiar with them as opposed to bringing awareness within context to things that have changed. I outlined them previously, but will add them below again:
There is no sense of version history that I have seen in the source material or in the curated content ie. races specifically etc. If I read how the warforged race worked a few months ago, there is nothing in the warforged race that denotes that it has changed.
There isn't any sort of changelog that helps me see what has been changed, seeing as how the content on dndbeyond is considered an always updated version of wotc 5e content this probably gets a number of updates throughout the weeks.
The average player I play with doesn't have the time to constantly research or look for changes that might have affected their characters. We show up to enjoy time with our friends and enjoy the game, and currently leverage dndbeyond to help control aspects of the game. The concern is when aspects from within dndbeyond change and it doesn't match what we remember and there isn't an easy to access or understand change log of sorts.
There are other UA pdfs for magic items, the artificer (two versions) and--if I remember correctly--dragonmarks. Googling for "Unearthed Arcana" and the appropriate term (Eberron magic items, artificer, etc.) should get you to those documents.
I'm guessing it would be up to WOTC to put together a change document. It's a good idea, but one quite frankly I doubt will be implemented. As far as I know, the mechanics in Wayfinders were not changed/updated during the playtest period. The only changes I know of are happening now that Rising is out and the mechanics have been finalized.
Again, if your players already have characters built on the playtest versions, nothing has changed for those characters.

That isn't an answer, as WotC continues to push errata and other "official" content updates as well. There shouldn't be a disparity between digital and print.
I believe that having parity between digital and print is the goal. Reprints of the books incorporate published errata, as do the sources here. See, for example, the errata documents here: https://dnd.wizards.com/articles/sage-advice/errata-november-2018. Those corrections have been made in the relevant sources here.
And Wayfinders isn't a print product--at least not yet--for that very reason. When Wayfinder's was first released and folks asked for a print on demand version, Mike Mearls' said that option would only be unlocked after the playtest period was over and the mechanics had been finalized.
Aside from earlier printings of books that have since received errata corrections in later printings, can you point to content updates WOTC is pushing that creates a disparity between digital and print? (Again I'm not including Wayfinders in this category because Wayfinders is at this point only digital)
Group patrons (I think 12, with various tables and features)
Adventure seeds (basically a bunch of maps and tables for generating adventure locations)
A mini adventure (levels 1-2)
There might be more, but I haven't done a full comparison. By word count alone, Rising is 2.5 times longer than WGTE

I own both books, but so far I don't really see anything in WFTE that didn't find it's way either being scrapped or in the new book. I'm curious if there is anything that is only in WGTE or was only added to it. (Perhaps looking for a reason for spending more time looking in WGTE).
you dont have acsess to the warforged race with the old book. i got it hoping to make a warforgede but ended up having to get the newer version to accsess it
