Doesn't matter if it's the poisoner's kit or a masonry kit, the Rogue should have the opportunity to have expertise in at least four of them, and expect to be able to do cool shit with them.
It's done in character creation under class features.
That is one way to do it, it can also be done in character sheet by going "Features & Traits" and selecting the Weapon Mastery feature (under Rogue) from there.
Looking at the character sheet here on DDB, and I don't see were or HOW to select which weapons I want to take for my Mastery!

The game as a whole needs a tool/tool kits and nonmagical items overhaul and an actual system we can dig in.
