You can do that, mechanically it's an action and removes 1 stirge. The healing potion is a BA officially byb2924 rukes and was long a popular homebrew. It can also be given to a creature within 5ft for the full benefit using the BA.
(ooc: I wasn't sure how 2024 rules interact with the alchemist's feature experimental elixirs as they say those are an action to use... but if you are ruling it's a bonus action, then can I use my action to also remove another one?)

Dallas blasts the golem, his first shot, but connecting with the second. The golem almost topples as it is pushed back ten feet, but comes to a stop against the wall of the cavern.
Alchemist is artificer class, which doesn't appear in the the core books for 2014 or 2024, so it's expanded rules apply, in this case I think it's from an Eberron book. The new DMG states: Using a Potion. Potions are consumable items. Drinking a potion or administering it to another creature requires a Bonus Action. Applying an oil might take longer as specified in its description. Once used, a potion takes effect immediately, and it is used up.
So, if it's just drinking a potion, the 24 rule should apply. Making them as an alchemist might be weird because it predates current crafting rules, but whatever.
If that's how it works and it used my bonus action then I would like to use my action to remove another stirge.

I'm ruling that you did use an action to remove one. I awarded a kill for the creative prone drop attack - it would normally not deal damage.
Kos still has 2 stirges embedded and Dallas has one. each deals 5hp automatically this round due to blood loss.
12 stirges still fly about in the dark cave, illuminated only by Tess' everburning light.

Sparhawk easily swats two of the stirges attached to Cha!jil, destroying them in a crunchy-pop that spurts blood like a burst water balloon.
Cha'jil flails her arms, desperately, successfully detaching the third stirge which flops to the ground, where she stomps ot underfoot.
