You can fire and load a crossbow in the same turn. The only thing is that you can't fire it more than once per turn due to the loading property (unless you have the crossbow expert feat).

You hit, that vampire is no longer turned. The vampire's turn. The vampire moves to the section of wall above Zan and detaches from the ceiling, falling right into him. Zan, make a DEX save. (Still vampire's turn)

Grapple and stake is safer than pure damage, but you need to get the vampires off the ceiling first. Then again, they're only turned for the minute.
