There's not even a full article on the entire civilization that built it, let alone specifics on this one stronghold. It notes Phalorm was destroyed by the Horde of the Wastes, which was a massive goblinoid uprising.
I think it's not out of the realm of possibility that an entire army of goblinoid creatures- goblins, hobgoblins, bugbears- might have besieged the place a thousand years ago. Mortar between the stones and wooden reinforcement beams would likely crumble to dust in that time, causing the structure to become unstable. In the past thousand years, it could be likely goblins, orcs, Neverwinteran scouting parties, or perhaps some High-Elf scouts from Silverymoon out East used the place as an outpost or landmark until the Cragmaw goblins took it over.

Anyone know the history of Cragmaw Castle? (i.e. before it became the ruin from LMoP?)
So the campaign book cites that a wizard-noble of an ancient civilization called Phalorm built the castle.
