I don't see why being a Barbarian requires you to be savage. Think about which Subclass your giving him and make a story around it. Totem Warrior of the Wolf? He has a strong bond with dogs. Berserker? He uses emotion as a weapon. Zealot? He was just a little too pious for the church to make him a Paladin. Ancestral Guardian? His powers and skills come from his heritage. Storm Herald? Maybe it's actually his Sorcerer's Blood, but he never learned how to cast magic.
Yep. My dragonborn character is only a barbarian because he’s just young and strong, and prone to hormonal surges when mentally flooded in fight or flight situations. So rages fit for him character-wise. The rest of the time, he’s a boy scout who just wants to be useful keeping the party prepared for nature and wilderness survival.
So, I want a barbarian but I don't want him to be some frothing savage. I want him to be more civil.

You could create your barbarian with a certain trigger that causes him to fly into a fit of rage, but otherwise he is normal and quite civilized.

I like this idea. Say a nobleman who slowly builds into a rage when he sees chaos or injustices, or a priest that gets undone by the sight of heresy.
