Let's assume for whatever reason that an Aboleth happened to be near by a dying beholder after dealing with adventurers and the Aboleth managed to not only slay the beholder but devour it's mind. What would happen? Will it get stronger? will it die because beholders are difficult to comprehend?

I don't believe there is a hard rule about this, but I would recommend going with what's most fun and dramatic for the game, and a villain just dying isn't the most exciting thing. Make them stronger, give them knew knowledge and new motivation that coincide with that new found knowledge.
Plus, Aboleths are incredibly intelligent, more so than beholders. I think they would be capable of understanding for the most part.

If you love a character, you give them pain, ruin their lives, make them suffer. Maybe even throw in a heroic death.

I am assuming this is in the Waterdeep Dragon Heist campaign and the aboleth is Golorr and the beholder is Xanathar. Am I wrong?
