So I love watching shows like Critical Role, Acquisitions INC., Dice Camera Action, Missclicks, but I know nothing of how they do it. I know each show is different, some with whole production sets, but if I wanted to play long distance with video, and be able to record it what do I need? Where to start? (Side note I'm military so friends that play come and go or are always on the move so portability is important! Also not every where we go has good bandwidth so any ideals on getting around that too would be helpful;)

Connecting to each other - Skype is the most common way people do it. Zoom seems to be a big improvement over Skype, so I'd check that out.
Platforms - For distance games, Fantasy Grounds and Roll20 seem the front runners. They both take a pretty decent amount of prep to get rolling.
Connecting to Twitch - Open Broadcaster (OBS) and GameShow are the two most widely used and user friendly but go to Twitch and poke around the other options and find one that suits you.
Video - Logitech webcams will work fine until you decide if you really want to keep it going.our first season was basically all webcam and we've only recently been able to upgrade to better equipment. It's on our personal budget as we aren't partnered just yet
Audio - Yeti's are great to start. We just went to Lav Mics and a mixer and LOVE the sound quality
You can obviously get more complex but it's all about the amount of money you spend. If you wanted to look amazing without breaking the bank on HUGE studio gear, check out Black Magic Design. That's what we and Geek & Sundry use. They obviously have a major studio behind them (Legendary) and a sound stage but you can compare the quality level between our streams and see how close a one or two man production can get to that.
Satine & I will actually be doing seminars on streaming at most of the Cons we attend so we can keep the community growing. If you happen to get a chance to swing by, give me a hollar, one Joe to another.

You'll find a lot of options when you dig into the streaming applications. You will likely need something to act as a capture device if your computer isn't already equipped with something like that.
