There are a few options, these can all be found on page 7 of the Adventurers League Dungeon Master's Guide (link).
The dead character can pay for raise dead to be cast on them, provided their body can be taken back to civilization. All conditions and drawbacks of raise dead apply. If done during an adventure, the character can continue to play and earn rewards for that play (AL Player's Guide, p4).
The dead character's party can (at their discretion) chip in for the some or all of the price of raise dead, as per #1. The party is under no obligation to spend their own money to raise a party member from the dead.
If the dead character is level 1-4, they can invoke Faction Charity to get a raise dead cast on them. Using this option causes that character to forfeit all XP and rewards earned for that session (including those earned while they were still alive). That character is not allowed to replay that episode or adventure. Additionally, they take a -4 penalty to attack rolls, saving throws, and ability checks, reduced by 1 for each long rest they take.
The player can create a new 1st-level character. The new character doesn't possess any items or rewards of the old (dead) one.
Those options are true, but necessary only if the party itself has no access to abilities that would revive that character. A character can be revivified as normal, they can be raised from the dead as normal, they can be reincarnated, or if at higher levels, have resurrection or true resurrection cast on them.
“It is a better world. A place where we are responsible for our actions, where we can be kind to one another because we want to and because it is the right thing to do instead of being frightened into behaving by the threat of divine punishment.” ― Oramis, Eldest by Christopher Paolini.
There's a sort of window of time, in between the faction charity resurrection you can get at low levels and the point at which the party itself becomes sufficiently powerful to resurrect killed party members. In between those two points, you basically just have to be careful. Dying has consequences.

Faction charity, if I understand correctly, ends at 4th level. The lowest-level spell that can resurrect fallen characters is revivify, which becomes available to dedicated* spellcasters at 5th level. If the cleric's out of 3rd-level spell slots, though, you're in trouble.

*as the DMG puts it
For revivify, you have to get to the body within one minute of death, something that's often quite difficult to do, given the typical circumstances of death in a D&D game. You're pretty safe by 13th level, at which point a cleric can cast resurrection and restore you to life even if you've been dead for years. That's assuming, of course, that you have a cleric in the party.
Yeah, I've heard about that and I can't say that I'm looking forward to it. I'll see what the rationale is, but so far I'm not optimistic that this is a good idea.
What do you do? The character just stays dead?

If you die in AL you die in real life.
Harsh!
The more important question is .... what happens to their snacks?!?

Okay, from this point forward, anyone making reference to any Jack Chick publications in any way will be drawn and quartered...
Except... Wait a minute... I meant from this point on.

It's the storyline. Resurrection magic has ceased working, so it's up to the heroes to rectify.
I foresee the rich tears of the same kind who couldn't tolerate the Ravenloft season's restrictions. Plot is poison to powergamers.
Under the 'low-gold' rules of AL9, what is the likelihood of anyone having a 300gp diamond for Revivify or a 500gp diamond for Resurrect?
edit: although I guess we are now 'magic-item-rich, so there is always the new rule of giving up the item slot ...
