This weekend I am going to PDXAGE, a small-to-midsize game convention in Portland, Oregon, and am intending to get started in the Adventurer's League games going on there. I've never done real Organized Play, even though I've been playing, reading, studying, and even writing RPGs since the early 1980s. What I'm wondering is how this all works, and what will happen next if I decide to pursue it after the convention.
I also wonder if I will get to play the "smart Fighter" character type I would prefer.
WotC streamlined organized play a lot so you're in luck! :) Basically roll up your character as you normally would, while also abiding by the "PHB + 1" rule. Basically you can only use the PHB and one other book to make your character. Then fill out a logsheet per the Adventurers League website (you'll need a DCI number). Organized play for 5e is really low stress. It's basically just a way for you to bring the same character to different characters and have legitimacy to the experience, gold, and magic items, your character has!
