I'm currently running The Forge of Fury adventure from the Tales from the Yawning Portal book. My group was pretty flush with cash from the last adventure, so I decided to give them an option when they got back to town to throw a huge party to celebrate their first successful adventure. I let them know that there were a handful of adventure hooks to the next adventure (some including pretty nice prize payouts) and the more money they spent on their party, the more adventure hooks they might attract. The group blew almost 1,500gp on a week-long bender in hopes of unlocking as many hooks as they could. After they got their hooks RP'd, they realized that they were going into an ancient dwarven fortress full of traps and secrets and not a one of them spoke dwarven, so they went out and hired a dwarf explorer NPC for 15gp per day plus another 15gp every day his life was put in any real danger (hazard pay) for a ten-day term. Any days past the ten day expedition would cost another 20gp per day (40gp on hazard days).
All in all it was a good way to eat away at a good chunk of their gold hoard in a fun and entertaining way, and they ended up spending their way into probably making way more after we get done with this adventure.
I only played my first adventure in the league the other day. ^^; I'm a level 2 sorc now. I used some of that dough to purchase a 50 GP diamond to be used with Chromatic orb, which is already a nice power/flexibility boost :3

as a rogue with the criminal background, when in large cities i use my contacts to spend money on insanely high costing poisons to make my attacks more dangerous
I'm currently playing a fighter with heavy armor proficiency so because my AC relies on my armor and because I'm a two-handed master who can't use shields I spent gold on lots of different armor upgrades. (Chainmail first then Splint then plate which I'm currently using). Plate isn't cheap, so that put a dent in my funds. I also bought lots of health potions for the weeks we wouldn't have a healer.
I enjoy buying horses and carts and trade goods, can't make a profit, but it's a lot of fun. gives you hard goods to carry around in your cart and it lets you spend money on feeding all those horses.
My players like to buy the most dangerous weapons they can afford, but they're also fond of acid vials.

I bought nothing in T1, but as soon As I had enough money, (wasn't until T2) I blew it all on An elephant with the best barding, saddlebags, and military saddle I could afford.
Currently my party is attempting White Plume Mountain a 2nd time to recover the bodies of our first TPK. I spend all my gold on Health Potions. We have no healers in the rescue party so we are bringing around 200 health potions. ( party composition is Barbarian, Wizard, EK/SORC, and a bladelock).
I prefer Pathfinder's view on treasure. We should be allowed to purchase common magical items with the gold we get from adventures. It is amazing at level 6 I do not have a magical weapon and yet I am sitting on a pile of gold. Let me use my gold to purchase a +1 magical weapon! There are common magic items that I should have access to as an adventurer.

I am playing a life cleric and plan to buy platinum rings (50gp) for Warding Bond spell, as a disciple of Ilmater my character really wants to use this!
Casters, especially Wizards (anyone with Ritual Caster feat), will probably always pouring money into material components and spells.
It costs 50gc/spell lvl for a a Wizard to scribe a scroll into their spell book.

It only costs it the once, not for every cast. The only instances where components cost for every cast is if the spell indicates that the component is consumed by the casting.

I know it only costs once, but no level 1 character has 50 gold to blow on a Diamond, so at best you're not inscribing it into your book until level 2. Once you get to level 3, you have access to level 2 spells so you're not going to waste your two free inscribings as a Wizard on a level 1 spell.
This assumes you're a Wizard and not using the Ritual Caster feat or Pact of the Tome with Book of Ancient Secrets, which only give 2 free lvl 1 spells and everything after has to be inscribed.
If you find/purchase a scroll it then costs another 50gold per lvl to inscribe it, on top of the material component cost.
Identify also costs 100 gold just to use, which is yet another expense that same character is going to wrack up. Especially when it only saves a small amount of time. The spell costs 1 minute (not quick and a single item) with as spell slot. 11 minutes as Ritual per item. A Short Rest to have everyone in the party each identify 1 item each.
Costly Components also limit spells because you can't use Foci, so all spell with a costly material component require an open hand.

Mate this is bloody brilliant I am stealing this for sure for the next in-between adventures, I have! Fantastic idea!
I only just got to Level 3 but I'm saving up for some better armor. I'd imagine spellcasters would want those specific prices material components and ritual casters would want gold for copying spells. After I get my armor I'll probably just look into potions.

Since most of our prized possessions are magic items (traded using DT days rather than gold), what do YOU spend all your gold on?
At Tier 1, wondering why I can't get a bulk discount on Potions of Healing. Can't they put it in a Keg or something?
At Tier 2, picking up a few accessory magic items (including a spare weapon or two) via faction... and potions of healing.
At Tier 3, expensive consumable spell components.
For wizards - copying spells, and casting some spells.
