I run my games in person, and while I could probably get an encounter management system up and running through Foundry or DNDBeyond, I like to run combat manually. So I made this table to help track things in combat. It's pretty lightweight and quick
Row A is pretty straightforward. It's just the name. In Row B, you keep track of damage as it builds up. I enter it something as "=5+10+4", with each number being the roll used. That way I don't have to do the math. Row C is the participant's Max HP. Row D subtracts Row C from Row B.
Row E is pretty interesting. It compares Current HP against Max HP. At 100%, it says Undamaged", at 75% it says "Steady", at 50% it starts to read "Injured", at 25% it says "Weakened" and at 10% or lower, it says "Critical". At Zero it says "Dead". I used a series of If formulas to get it to work. I used conditional formating to color code
I added Rows for checking to see if the participant had Concentration and Reactions spent. This was just done through simple data validation.
After that there is 4 rows of drop down menus for status conditions. And finally there is a row for initiative. I can write in what each participant gets, and the sort the rows Z to A based on that, that way the highest initiative rollers are sorted to the top.

Yeah, you gotta go with what works for you. I used a spreadsheet when I first started, but switched to the DNDBeyond combat tracker. It's not perfect, but I like how I can click on a monster and see its stat block.
I like how you have columns for conditions, but I've found I prefer players to manage that. We use owlbear in person, and I have them add the condition markers on the map. I really wish the combat tracker would track conditions, but looking at the map works pretty well.
But yeah, building a tracker yourself can really help you understand what's going on and tailor it to your needs. I build a tracker for Axis & Allie 1940 Global once. We only used it a few times, but it really helped me understand the game and keep track of things.
