I am running an eberron campaign, and the next major portion of it (hopefully levels 7-11 or so) will heavily feature a giant, cruise ship style airship. I now realize that there are very few readily available existing cruise ship shaped maps. Does anyone have advice about how I should put this thing together? I'm trying make it an immersive enough space that my players will want to spend a significant amount of time there.

Also, if you want some techno-fantasy airship designs that could work, I'd suggest looking into Final Fantasy airship designs. Especially sine at least a few of them were used in-game as luxury travel options.

We are running the campaign in Eberron, so the techno-fantasy is exactly what is needed. That being said, I think there is some real cool potential with the Zeppelins and the encounters they allow. These are both great resources. Thank you!
I issue is that basic airships construction takes a long time (months) because of the resources needed to make one. Soarwood, a limited annual supply. Dragonshards (Khyber and Sibery), without the steady supply of both , constructing grinds to a halt.
It would take a lest a decade at a minimum, with no complications, to make a cruise sized airship.

Have you considered looking at the early 20th century Zeppelins? They were, after all, early 20th century German aerial luxury cruise ships.
I'd have a look at Airships.net, which gives all sorts of details about the design and layouts of the Hindenburg, the Graf Zeppelin, and others.
I don't think these are likely to fit exactly into a D&D setting - but it gives you a starting point, and a lot of inspiration to inform your design.

If you're just basing it on a cruise ship, there's a site called CruiseMapper with deck-by-deck maps for literally dozens of cruise ships.
I am not bashing it, the idea of it just made me think the logistics of making one.

Check out Cze and Piku's post of a casino ship. I think you could adapt it as an airship easily enough.
