If you choose to "Create a Feat" from the homebrew menu, you can select "Fey-touched" from the dropdown. Other than changing the name (which will default to "COPY_OF_Fey-Touched"), the only thing you need to do is click "Edit" for the "Bonus - Choose Intelligence, Wisdom, or Charisma" Modifier. Change the "Modifier Subtype" to "Strength Score" instead of "Choose Wisdom, Intelligence, or Charisma". Save of all that and you'll have your feat.
If you need to do something similar, the "Fixed Value" part of the modifier is what specifies the amount the score increases by.

That is all handled on the backend somehow. I think what they might be doing to make that work is creating hidden invisible versions of the feat that we don’t get to see or interact with in any way that are each hard coded to one of the three mental stats and when we select the feat and choose our spellcasting ability, the system uses some slick sleight of hand to pull a switcheroo and gives the character one of those three feats with us being none the wiser about it.

Yes, it is possible to designate a specific spellcasting ability and create a different version for each option, that’s actually the way DDB used to do it before they got all inspired to invoke eldritch infusions into the system and such. (Too bad they’ll never get rid of that kobold infestation they have though, shouldn’t have hired those cheap contractors while building the site.)
Since their entire purpose is taking Fey-Touched and adding Strength as an alternate associated ability, I’m willing to go out on a limb here and say that they most likely don’t need the other scores. My guess is this is for a specific character in a specific campaign and will never get published for general use anyway. So I doubt they really need to worry about it all that much anyway.

I added that modifier, but now it's giving me both options. How do I get rid of the old +1?
You don't need to add a modifier, as you can expand it and click "Edit" as shown in the screenshot below.
Then you edit the "Modifier Subtype" as shown in the screenshot below.
Alternatively, you can just click "Delete" on the original Modifier, as shown in the first screenshot.
