In the rules glossary for Attack action, it says I can equip or unequip one weapon when I make an attack as part of this action, either before or after the attack. Does that mean I can do so for each attack if I have the Extra Attack feature or the additional attack of the Light weapon property? Does this count as my free object interaction this turn, or is it in addition to it? For example, lets say I attack with a spear and kill a monster, then after that I stow my spear. Then I make a second attack with my longbow, equipping it before the attack. Is that how it's supposed to work? And would I then get to remove a potion from my pouch as part of my move on that same turn?
You are correct. You can do so once for each attack you make as a part of the attack action.
If you're making an attack that isn't part of the attack action, such as an opportunity attack or the bonus action attack the Light property gives you, that attack doesn't come with a weapon interaction. It has to be your base attack, the various Extra Attack class abilities, or something else that says the attack it gives you is part of the attack action.
I don't know that this is helping or hurting, but unless it has been officially been clarified, there appears to be confusion as to whether you can equip or unequip once per attack action where you made an attack or once per attack as part of an attack action.

It's in addition to your free interaction.
