No. The Echo Knight feature specifically says you can make one additional melee attack from the Echo's position when you take the Attack action. Not one per attack.
Also, the Ranger's Volley is not the Attack action. It makes attack, but is it's own action, so the Echo can't even make a single extra attack because you did not use the Attack action.

They have been seemingly trying to get rid of unnamed actions like that in the 2024 rules and it looks like they wiped out this one entirely...

Maybe I'm assuming too much, but it seems like the OP might not be using the rules from the 2024 PHB.

In addition to everything else, the echo knight power must be a melee attack, and volley is a ranged attack
