I'm trying to emulate the human race trait that I don't have access to (The one where all ability scores increase by one, not the three by one or one by two other by one basic human). I can't figure out how to make it happen. Any help would be greatly appreciated, thank you!

Have you tried enabling legacy content and making sure you that you select the Legacy or 2014 version of Human?
