There is nothing about it in the Monster Manual, as I am sure you are aware. Personally I default to the idea that the have to rest in a coffin sitting on the dirt from their original burial site. It leads to some hard to peg down vampires, but also allows a party with no access to sunlight or water a way to permanently kill them. I like the sense of a party realizing they don't have access to a typical means of slaying the beast, but still allowing a means of success. Also, it is fun to have the party destroy a more stationary vampires resting place just to realize he has more set up around his castle, town, etc.
To answer the question though, I allow a vampire to set up a new "home" almost immediatly or however long it takes to move the dirt. If you prefer a strenuous process for the vampire I would say it would work similar to how it takes time for lair effects to dissipate, about 5 days give or take.
Yeah. I was more wondering if a PC did destroy their "home" but had to wait to kill the vampire, how long it would take the vampire to get things set back up.
I would say however long it would take him to retrieve dirt from his original burial site and a replacement coffin. I think of the "home" as a secondary aspect with the main point being where he/she sleeps, but you could say that his/her evil has to take hold before it would be considered a suitable resting place which I would say takes about a week to get to an acceptable level and closer to 1-2 months to reach the maximum potential.
If you are dead-set on the home vs the resting spot, or it just fits better in the world that way, I would think no smaller than a noble's manor or as large as a city.

"home" is essentially the resting spot, as that's what he has to make it back to. I'm not sure the monster manual ever describes what counts as a resting place.
Yeah, it doesn't so you kinda have to just run with whatever works for you/your group. That being said there might be more infor in earlier editions or other systems to give you an idea.

There's also the option of having multiple homes for said Vampire (All pre-prepped using materials from its original gravesite). Technically there isn't anything against it, though in game, this Vampire may have to retreat further than it planned to after the PCs took care of one of these locations. Makes for interesting RP moments as the PCs figure out that this Vampire is more prepared than they originally thought. (Possible campaign idea right here)
When Vampires can live for centuries... they'll (hopefully) plan accordingly against such nuisances.
Specifically the rules state "its resting place" so I would say it could only have one, which may default to the last place it slept. But I feel like there should be more to it than just that.
