So I think I got the highest ac you can achieve without DM provided magical items just by yourself and nothing but race and class features while not being a tortle.
The main thing about this build is the ac So I'll get right to it
Passive ac = 18 (plate) + 2 (shield) + 1 (warforged) + 1 (defense style) + 1(forge magical armor) + 2 (enhanced defense) + 1 (cloak of protection) + 1 (ring of protection) +1 (soul of forge)
= 28 passive ac
Active Ac = 28 (Passive ac) + 1(alchemist resilience potion) + 2 (haste) + 5 (shield) = 36 AC
congrats! A tarrasque has to roll 17 or above to hit you! That increases to 19 or above if you are a tortle (17 natural armor instead of 18 plate and losing +1 from warforged, but gaining +4 if you retreat into your shell). If you have half cover then as a warforged a tarrasque needs 19 or higher to hit you or literally HAS TO CRIT in order to hit if you are a tortle.
Fun fact! This is all assuming your dm doesnt give you any cool armor, unrelated info, adamantite armor is immune to crits.

What do you want your character to be good at?
Generally speaking, that's what the "max" of minmax is referring to. The minmax process makes a character that is really, super, extremely good at that thing, and sacrifices anything else (min) to get it.
So to suggest something we'd need to know what area you'd like the character to excel at.

It is apparently so hard to program Aberrant Mind and Clockwork Soul spell-swapping into dndbeyond they had to remake the game without it rather than implement it.
Persuasion, FYI the resilient feat can only be used once. The potion of giant strength can give up to 29 strength however
I am also not convinced a fighter buffed up by a group of wizards is broken as the wizards could do some pretty powerful things as an alternative.
How long does the character need to be "broken" for without the buffs he would die very quickly and I can not imagine a dm giving enough potions to keep your strength up for every combat.
You can use it once for each stat

You unfortunately cannot. That’s just an issue with DDB’s user interface - they have to make a separate feat for each ability score. The feat doesn’t specifically say you can take it more than once; so you can’t. Same with skill expert and skilled, for example.
I'm curious how you'd make Gestalt a character. Are we talking an illusion wizard? I think you need a lot of buy in from the DM to run an illusion wizard successfully.
With this build you can use str mainly and wear heavy armor to give you an actual good AC. Yes you lose your unarmored def and unarmored movement but you still have access to every single ki ability of the monk. You also have adv on all spell saves thanks to the yuan ti or stayr race. This also allows to use polearms for gwm atks. Also the shadow allows for inf teleport later on and you can take a 2nd level in cleric to nab you channel divinity to keep that teleport active even more often and heal a small amount.
Reliable talent does *not* work with half proficiency so says sage advice. Being half proficient is not considered being proficient
Convincing folk that the +3 a high level dude with half proficiency is "um, actually" less proficient than a level one dude's +2 from proficiency is going to be a tough sell there.

That may be the RAI "official", but I throw that ruling in the bin alongside Crawford's statement that See Invisibility doesn't negate the disadvantage for targeting an Invisible creature. The rulings are nonsensical.

Actually this came from the developers of DND themselves. That stated these two abilities *Do Not* work together
