I mean, yea. A lot of it has to do with the mind and how strong it is, or telepathy stuff. It isn't really psionics though, I think the two are pretty different.

A psionic subclass for the barbarian makes sense...
Imagine a barbarian whose rage is so intense, it affects the the thoughts and minds of individuals around them, driving them to madness or paralyzing them in their tracks.
A "mind-render" or "psychic berserker"...they might be touched by some force from beyond the Far Realm, or simply became so enraged, their mind snapped.
I can also see a psionic subclass for monks.
I had concocted a "Path of the Guru" subclass for the monk, who unlocks interesting abilities through meditation, channeling their ki through chakra-themed abilities. Gaining "True-sight", hardening their skin so that it is like metal, teleporting themselves or becoming intangible, removing status ailments from companions by expending ki points, gaining flight...these could easily be framed as a mastery of psionics.
Clerics who manipulate the fabric of chance and fate to turn the odds in their favor...or misfortune upon others.
They can impose advantage for their comrades for weapon or spells attacks, or impose disadvantage by creating an Entropic Shield as a reaction, for enemy spell saves and attacks.
A potent ability would be...you give yourself disadvantage to your roll, but if you STILL manage to roll successfully, you deal MAX damage for the dice, for weapon or spell rolls. It creates a gambling style of play.
You can use your Channel Divinity to aid in your skill checks, as well.
"Oath of Binding" Paladin:
Paladins whose Oaths are sworn to whatever contract they currently hold...they are mercenaries and bounty hunters who bind themselves to whatever mission they choose. Once they dedicate themselves to a "contract", they cannot be bought, and they cannot be stopped. Their commitment to their "binding" gives them supernatural awareness...they are drawn to their quarry or goal as though guided by some divine force, and are able to track them down with ease. They are imbued with superior precision, giving them the ability to smite with ranged or thrown weaponry, and are incredibly resilient, refusing to go down until their task is finished.

I think monk and warlock could both be next for psionics. The monk being some kind of way of awakened mind or something, using ki to fuel all the typical psychic effects (perhaps psychic disciplines akin to 4 elements). The warlock being a hive mind or collective consciousness patron that focuses more on skill/tool/language proficiencies from shared knowledge and buff/debuff psychic effects.
There might be a barbarian. I could see it work mechanically, but not sure if it fits thematically. Maybe a path of raging mind that gets resistance to psychic damage, advantage (or just bonus) to INT and/or WIS saves, and possibly forcing (or imposing disadvantage on) concentration checks nearby.
The sorcerer already has the aberrant mind, but I could see them making a more psionic specific version (maybe using feedback to make a version 2).
Bards are another class that fits nicely with psionics.
As both manipulators and individuals who can affect others with sheer force of presence, perhaps they could use psionics in a similar manner.
"College of Thought" or "College of Dreams", consisting of philosophers, writers, thinkers, investigators, fortune tellers or mind magicians...amusingly, I picture something similar to Mathew McConaughey's Rust Cohl character from "True Detective"...just rambling on about the nature of the universe.
Perhaps they are fortune tellers, using their mastery of the mind to reveal cosmic truth through tea leaf, bone or Tarot reading.
Or maybe they use their telekinetic prowess to move objects to put on shows (imagine musical instruments playing themselves).
Or reading the minds of other people to pull off elaborate cons or rigged games of chance.
For mechanical features, I'd see a bard using their psionics in a manner that bolsters defenses, or in tricky ways...
Expending Bardic Inspiration to give allies a boost to their AC for a round, flavored as a telekinetic bubble.
Or letting the bard teleport around the battlefield, or swap places with allies.
Or rebuking enemies that target the bard, blasting them for psychic damage, or pushing them around the battlefield as a bonus action.

3rd-level College of Eloquence feature
You have gained the ability to speak and reason with any creature. As a bonus action, you can expend one of your uses of Bardic Inspiration. When you do so, roll your Bardic Inspiration die, and choose a number of creatures within 60 feet of you that you can see equal to the roll. For 10 minutes, the chosen creatures can magically understand you, regardless of the language you speak, and you have advantage on Charisma checks made to influence them. This feature works even on a creature that doesn’t speak any languages.
This is the language feature I was talking about - it feels psionic in a bard-ish sort of way (at least to me).

The creature takes psychic damage equal to the number you roll on the Bardic Inspiration die, and the creature must succeed on an Intelligence saving throw against your spell save DC or have disadvantage on the next saving throw it makes before the end of your next turn.
The creature regains hit points equal to the number you roll on the Bardic Inspiration die, and the creature has advantage on the next saving throw it makes before the end of your next turn.
This is the other feature I was referring to. You can basically reach into the mind of another person and confuse them so much that they hurt themselves trying to figure out what you just said, or you can convince your beat-up friend that they're not actually that beat-up. Mind-over-matter flavor. Again, not terribly strong psionic flavor, but it can be presented as such.

I’m thinking something more “Jedi Mind Tricks” would be interesting. Probably not so great in combat, but it would probably be super fun for RP and Social Encounters.

I think it will have a Psionic Subclass for the Monk, and maybe the Barbarian.
I hope it’ll have a dedicated Psion Class, but I doubt it. 😢

Yeah, Monk’s have been Psionicists in previous editions so it’s not a huge stretch.
