Shifting seasons for Eladrin is neat, but seems like an awful lot of book-keeping for personality traits, and the cantrip mechanic is (bewilderingly) completely separate. Not a fan of "pick INT or CHA" either, since it goes against PHB race design.
Giving Githyanki +1 INT and light/medium armor proficiency plus misty step is making them a bit too close to an auto-pick for Wizards. Plus they're either Lawful Evil or chaotic. Most DMs are just going to ban them outright. Hard to grasp the point.
Githzerai are fine, I guess. Nobody strained any neurons porting over the Monster Manual.
Both races are excellent, I could be wrong but I believe this our first int/wis race in the Githzerai. I'm glad that the Eladrin have a stat choice- I want them to be good at both wizardry and sorcery. I like their seasonal mechanic too and I see why it's designed the way it is, I wonder if the racial fey teleportation feat from UA is still being published in XGTE, since it made it seem like an effort to make Eladrin and High Elves officially the same thing- though I guess having both wouldn't be the worst, a high elf sort of developing some of the side traits of an eladrin at the cost of a feat.
When will these races be added to the character creator/data set in DnD beyond?
DnDBeyond currently does not support UA content, until they do you have to wait to see if the UA content gets an official release. So if everyone likes this one maybe in 2018 Spring or Fall product.

Did you ever complete that coming of age ritual for your silver sword where you kill a mindflayer? If so, why are you a wizard? If not, what happened? What made you leave friends and family behind and break tradition? As a DM I expect at least a bit of effort on the player's part to not treat race choice as just a bag of stats for min/maxing.

Easy. Pick one of the following options.
The githyanki appreciate the value of someone who can kill a dozen enemies with a single action.
The githyanki do not appreciate the value of someone who can kill a dozen enemies with a single action, so they banished you.

Either choice still leaves a lot of questions about how you even learned arcane magic in the first place. First you'd have to accept that arcane magic is superior to Gith martial training and psionics (i.e. why are you wizard and not a mystic?) Even if it's true, that's a tough sell for a race that views all others as inferior. It's tougher still to have a member of those inferior races as your teacher. How was your relationship to them?
If your teacher was also a Gith wizard, that raises even more questions. What's their story?
I'm unconvinced by any of it. Eladrin just look like they'd irritate the party constantly with their changes.
Gith seem like they've been built such that you can never really use everything at once.
Yanki:
You're always wasting one of:
STR, if you go Wizard
INT, if you go most other classes
Psionics for their spells aren't that exciting.
Zerai:
Wasting:
WIS, if you go Wizard
INT, if you go a WIS class
Monastic Training, if you go martial
And while their spells seem like they'd be a little more useful with Psionics, they're Wisdom-based - which means the INT bonus isn't all that helpful.
Compare to other races, where you can put your bonuses towards something worthwhile - they're just a little underwhelming.
With the announcement of the next book being about the planes and a section in it detailing the Gith and their war with each other and the Mindflayers, I think it is safe to say they will soon be an official player race. So, what changes do you guys think we'll see when that happens? What changes would you like to see?

I love the Shifting Seasons mechanic of the Eldarin it just feels pure Feywild.
The Gith Psionics I would have liked more if they gave some Mystic abilities instead of just spells.

I love the eladrin version of Seasonal Affective Disorder. I rather like the gith, as well.

It seems like the Githzerai monastic training works in wild shape, so their +2 to WIS means they'll make good druids as well as monks.
