Telepathic Bond. The fiend ignores the range restriction on its telepathy when communicating with a creature it has charmed. The two don't even need to be on the same plane of existence.
Shapechanger. The fiend can use its action to polymorph into a Small or Medium humanoid, or back into its true form. Without wings, the fiend loses its flying speed. Other than its size and speed, its statistics are the same in each form. Any equipment it is wearing or carrying isn't transformed. It reverts to its true form if it dies.
Claw (Fiend Form Only). Melee Weapon Attack: +5 to hit, reach 5 ft., one target. Hit: 6 (1d6 + 3) slashing damage.
Charm. One humanoid the fiend can see within 30 feet of it must succeed on a DC 15 Wisdom saving throw or be magically charmed for 1 day. The charmed target obeys the fiend's verbal or telepathic commands. If the target suffers any harm or receives a suicidal command, it can repeat the saving throw, ending the effect on a success. If the target successfully saves against the effect, or if the effect on it ends, the target is immune to this fiend's Charm for the next 24 hours.
The fiend can have only one target charmed at a time. If it charms another, the effect on the previous target ends.
Draining Kiss. The fiend kisses a creature charmed by it or a willing creature. The target must make a DC 15 Constitution saving throw against this magic, taking 32 (5d10 + 5) psychic damage on a failed save, or half as much damage on a successful one. The target's hit point maximum is reduced by an amount equal to the damage taken. This reduction lasts until the target finishes a long rest. The target dies if this effect reduces its hit point maximum to 0.
Etherealness. The fiend magically enters the Ethereal Plane from the Material Plane, or vice versa.
My brother kept doing crazy stuff with the female NPCs in campaigns, so I made homebrew with this thing that taught him a lesson. He thought it was just some random hot girl chained to a wall, so he broke the chain. She eventually stole his soul and he died. *Insert Roblox OOF sound effect*
Not sure what lesson this was intended to teach? You said he "kept doing crazy stuff" but freeing a prisoner hardly seems crazy, and surely that's only going to encourage him to never help NPCs?

One of our paladin NPC’s, who was characteristically serious and no-nonsense, got charmed and after we saved him he was pissed at himself the whole rest of the way through the dungeon. It was a lot of fun.
This actually happened in our campaign. Our poor paladin NPC got charmed and after we snapped him out of it he was kinda pissed at himself the rest of the dungeon. Fun times.
Why do succubi and incubi have separate stat blocks?

I have heard it's in the lore that succubi can redeem themselves, though it's not easy, as they have to do 7 acts of kindness for every act of evil they have done. As an immortal being, that list of evil acts is gonna get quite long over time...
If successful, their appearance isn't changed, so they still look like a succubus, but are good and probably considered a celestial now. Makes it clear to everyone what they used to be, but also that they gone through quite the quest to get where they are now, and I would imagine celestials would repect that.

To answer your first question, I need to give you a backstory. My brother ran a Fighter who enjoyed causing chaos and doing things to female NPCs that you shouldn't do at all. So, I threw this thing at him as he enjoys letting the prisoners loose. Knowing him, he would free this hot girl and do those "things" to her, so this was my Hail Mary to this problem while it was his lesson learned. To answer your first question, the lesson was, "do not abuse the female characters, for there could be consequences." Yes, I realize that this might have discouraged him from helping NPCs, but he was alright with me throwing that left uppercut at him. He never did those "things" again and I am personally happy that he matured in his ways. Now to find a way to get him to stop freeing the prisoners. Any ideas?
but succubis are not immune to the charmed condition so they are kind of able to fall in love (at least through some kind of magic)
In my personal opinion, the closest a succubus can get to loving a sentient being is through a obsession possibly in the form of lust. Not that this helps anyone... You'd just have a clingy, obsessive, demon "girlfriend". That probably would be problematical.🤷

I melded together this stat block and the Vampire's for a BBEG succubus and it was great. Because of canon Succubus lore, the introduction almost can't go anything except smoothly. It was super fun, honestly.
