The Ash Zombies are available in the Lost Mines of Phandelver book. Have to purchase it from D&D Beyond to use it.

I have purchased the physical copies of the Lost mines of phandelver and even in the books I cannot recall them having the variation. I just think it's a little strange they would have the monster in the adventure and not it's stat block.
I just searched it on D&D beyond and that’s where it came up.

As for your actual question, at the top of the website, there is a search bar that says 'Search Everything'. If you put 'Ash Zombie' in that search bar, it will come up if you own the monster.

New DM here. Wanting to make a world setting with a zombie apocalypse. Wondering if there was a good way to convert other creatures into zombies. Stats wise. Thinking Walking Dead or George Romero style zombie.
