I am a little confused... I was researching stoats (a type of weasel with a solid division) and found out that weasels/stoats dig burrows, climb trees and swim on the surface of the water...

I get that a swim speed would suggest they could swim down into the water, but why would a creature, known to burry and climb with their squirrel-like feet, not be given (either) a climb and/or burry speed?

I agree. You'd expect them to be expert climbers.

I don’t think much research went in to animal stat blocks in general.

Climbing, maybe, but it depends on the surface. Can it easily climb up an indoor wall in your house? If not, it probably doesn't deserve a climbing speed. It definitely should not have a burrow speed. What would it's burrow speed be? 5 feet is the slowest you can go with inherent speed. Can you imagine a little weasel digging through five feet of packed earth in six seconds? No?

Can they climb? Yes. Can they dig? Yes. How quickly can they climb or dig? Up to the DM.

 Now this makes perfect sense. 

I have been researching stoats (a kind of weasel, aka pipe foxes) for a bit now and it speaks highly of their climbing and burrowing, but you're right. The climbing speed of a stoat would be equal to their walking speed, but you're right, I have not seen a stoat (comparable to a squirrel) climb non-organic materials.

 Boy howdy you summed that up in one. The beast stats were plainly written by someone who was poorly versed in the wild kingdom.

No swim speed doesn't mean they can't swim. It means that 5' counts as 10' for movement when swimming. The same goes for climbing. I agree that they should have a climb speed though.

I can't believe the creators thought that it would be fit for this animal to be as smart as a raven. Like, ravens have been shown to understand how to work cooperatively, despite being solitary for the most part, they can apparently show a concept of self, which apes can barely pull off, they use tools expertly and often, usually using them as a first option, and they're incredibly adept and intelligent fliers as well. You know what weasels can do? squirm. Bite a bit. Do a little bit of a sniff sniff and then get instantly killed by literally anything that can do even one point of damage. And yes, I am mad over this.
