At this spot the creek is a good 20 feet deep. The canyon narrows down to about 15 feet wide, and the canyon walls rise 100 feet above the creek. It really is the ideal spot for a dam.
Someone make a Nature check to estimate how long it will take the reservoir to fill up, essentially leaving the creek downstream of the dam dry.
Baeshra looks around at the walls, "If we can pile enough rocks here, I can help stone shape to close part of it solid, we'd just have to rely on the stone for the rest. Alternately, I could maybe carve out a chunk of the wall and hope it collapses without falling on me."
Quickly eyeing the flow of the creek and the shape of the canyon walls and the terrain upstream of the dam you estimate that for every 10 feet of dam height, it will take the creek about 3 days to fill up the reservoir.

If there is enough loose debris and large rocks, Baeshra would want to create a dam across the river about twenty to thirty feet high and use stone shape to solidify it. If there isn't enough debris, he'd use stone shape to destabilize one of the cliff walls to create debris to block it off. Question is, do we want to stick around for the water to build up in case they come to investigate and or wait until its full to the top and break the dam to send a tidal wave through to sweep away the area?
( Lyngheids inclination is to wait for the ( hopefully) small number of giants they send and dispose of them, then break the dam hoping it destroys the mechanism and or damages the shaft penetration enough to let water into the mine. )
There are plenty of loose debris and large rocks around. Especially with the airship to help ferry them.
When everyone is ready, everyone make a Strength check. We'll do a group check to see if enough rocks/debris are dropped in place quick enough for Baeshra to seal them and create the dam.
OCC: Seeing we have had a long rest I'm sure Nyx would have which would include that the giants seem to be fortifying the wheel and making it metal so it's harder to sabotage. It is clearly important to them.

Overall, the part did pretty good! It takes the whole day, but with Umbriel's Thunderwaves (used them all) and Baeshra's strategically placed stone shape (used both) you are all able to damn up the creek, plus another 20 feet of dam height. It's not quite water tight, but the little amount that is trickling through is not enough to power the wheel.
The sun is just setting, it's early evening. What does the party want to do now? The majority of the waterflow faded about an hour ago, and you expect that the water shortage will be noticed soon.
