I'm the actual worst. Most of the time, I don't so much set a DC as a feeling of "14-17" or "8-12". And then I decide based on plot importance whether a roll in the given range succeeds--other factors do include how I'm feeling and what the actual die roll was. Since players don't actually know the DC, it works out pretty well.
I tend to pick a range when I'm planning, and then decide a specific number in the moment depending on circumstance and how creative my players are with their solution.

Quick question: does anyone use DC numbers in between 10, 15, 20 and 25, or do you stick with those base numbers?
I adjust slightly depending on how I feel. I've set DC's to 12 and 17 before.
