Extra attack says you can cast a cantrip in place of an attack though?
No. Extra Attack does not say that in general. Only extra Attack for the Bladesinger wizard allows one attack to be replaced by a cantrip.

There is also an Eldritch Knight feature that says if you cast a spell using your action then you can make a weapon attack with your bonus action.

Beginning at 7th level, when you use your action to cast a cantrip, you can make one weapon attack as a bonus action."
The only character that can replace one attack with a cantrip is a level 6+ Bladesinger wizard using the Extra Attack feature from their class. Extra Attack features do not stack so you can't combine Extra attack from fighter for more attacks at level 11+ with the Bladesinger extra attack to also replace one of those attacks with a cantrip.

If you gain the Extra Attack class feature from more than one class, the features don’t add together."
Ahh I see, I was looking at my bladesinger character sheet so that makes sense. I've played a lot of fighter but this is my first bladesinger so I thought I had just misread it before when I'd played fighter. Thank you for the info 🤙

ranger extra attack, paladin extra attack, warlock thirsting blade invocation, and basic rules Extra Attack verbiage do not offer cantrips as Attack actions. per Sage Advice, the general rule is that cantrips don't work with Extra Attack or any other Attack action. however, just like the person posting directly above you notes: there's a specific exception for the SCAG bladesinger subclass. specific beats general.
