I've only played once so far. First time I rolled a nat 1 and my cannon blew up the first time I tried to use it. Second time the combat didn't really last that long, and that's where we ended the session. As for the other two, I would like it if the cannon didn't go away after an hour but I understand why it does. An hour is six hundred rounds of combat. In other words, the only situations where this duration would really be an issue are a) your campaign is a never ending battle-ground or b) you're unable to take a long rest between combat encounters and you're out of spell slots. Honestly, the spell slot thing kind of makes the duration null.
Both times I've created the cannon I've done handheld, but I can see uses for both handheld and ground-based cannons.
