In the "Extras" area, it is possible to add Beast Companions, mounts, pets, wideshape stats, and so on - including Steel Defenders and Homonculous infusions.
These are stand-alone creatures, *not linked to the stats or mechanics of the character*. So, it doesn't update as the character goes up in level. The solution is to make a custom creature that has the proper stats, and update that when the character goes up a level, and use that so you have it on your D&D Beyond character sheet.
They actually do (partially) link to your character's stats, or at least the old ones did. For instance, I have a 6th-level BS and his (pre-errata) SD lists the correct HP and has Athletics +7 and Perception +5. I believe that scaling was actually bugged, but it's moot at this point. Hopefully when they implement the changes they get it working right.

When you look at the creature description of the thing that you can add in Extras, it has nothing in it to indicate that it scales.
So... *shrug*. I dunno.
