it's because in a lot of games the players aren't buying things at PHB price, but a haggled/adjusted price based on RP factors. It'd be more frustrating to click 'buy', have it remove PHB price, then you have to work out the difference, and add that gold back in. Rather than simply just add the item and remove the correct gold.
I have the same question. Is there a way to buy equipment on the app such that the gold balance adjusts? It's odd to have to do it manually.

Are you referring to the D&D Beyond app? At the moment, it is only capable of displaying the compendium content of the books you have purchased in the marketplace, or have been shared by content sharing in a campaign.
if you are referring to this website, not at the moment. On the last Developer Update stream (5 September) Adam did mention looking at how to implement shops.
Please add a Campaign option where the DM can set the prices for items (100% of book price, 80%, etc.) and then let players buy items. Also let the DM decide what items are available, even if it's grouped by category. Thank you!

It would probably be best to create the document yourself. DDB is the official ruleset, it is up to the GM to modify it as needed.
My players get a kick out of parchment with prices printed on it.

Maybe because adding equipment isn't buying equipment...?

I'd like to find out why D&D Beyond has 3 different drums, multiple horns and flutes of kinds, but not a single non magical HARP! Why not??!
